What Is The Use of Natamycin?

Hora de publicación: 2022-06-29     Origen: Sitio

The mechanism of action of natamycin is to combine with ergosterol and other sterol groups in fungi to inhibit the biosynthesis of ergosterol, thereby distorting the cell membrane, ultimately leading to leakage and cell death. Surface treatment of dough with natamycin in baked goods can obviously extend shelf life.

What are the uses of Natamycin in food?

1. Cheese

Natamycin prevents the cheese from developing mold during ripening to limit the formation of mycotoxins. Since it is difficult to penetrate the cheese and remains only on the surface of the cheese, it is very beneficial in combating mold growth on the surface of the cheese and does not interfere with the maturation process of the cheese. There are three specific methods of application:1). 0,05%~ 0,28% natamycin is sprayed on the surface of cheese products 2). Soak the salted cheese in a suspension with a concentration of 0.05% to 0.28% for 2 to 4 minutes. 3.Add 0.05% natamycin to the coating that covers the cheese.

2. Bakery

Spray 100,500 ppm natamycin solution on the surface of baked goods such as cakes, white bread, shortbread or spray natamycin on the surface of uncooked dough. Its anti-mould and freshness retention effect is very ideal. It does not affect the taste of the product.

3. Meat products

By the method of soaking or spraying meat feed, the purpose of safe and effective mildew prevention can be achieved when using 4 mg/cm2 natamycin. Soaking sausage shells with a Natamycin suspension in a concentration of 0.05% to 0.2% (f/v) or soaking or spraying the surface of stuffed sausages can effectively prevent mold growth on the surface of sausages. Fried meat, roast duck and other fried products as well as dried fish products can also be sprayed with a Natamycin suspension in a concentration of 0.05 to 0.1% (f/v) to extend the shelf life of the products.

What is the use of Natamycin in medicine?

Natamycin is used to treat fungal infections, including Candida, Aspergillus, Fusarium, etc., used and is also used in eye drops or oral medicines where natamycin is less absorbed by the body. When taken orally, there is a low absorption from the gastrointestinal tract, which makes it unsuitable as a drug for systemic infections. Natamycin is also used in eye drops, and its natamycin content of 5% is indicated for the treatment of blepharitis caused by fungi, conjunctivitis and keratitis caused by microorganisms, including Fusarium solani keratitis.

What is the use of Natamycin in beverages?

Due to the high sugar content and the content of organic acids in various fruit juices, it is very suitable for the growth and multiplication of yeasts, which spoils the fruit juice. The use of natamycin may increase the storage stability of soft drinks. Grape juice The application of 20 ppm Natamycin can prevent the juice fermentation caused by yeast contamination, the addition of 100 ppm can completely stop the fermentation activity. Since orange juice is contaminated by fungi under natural conditions, orange juice generally spoils after a week of storage. After the addition of natamycin, even if the dose is only 1.25 ppm, the shelf life can be up to 8 weeks if stored at 2℃~4℃. The bacteriostatic effect of natamycin is related to the storage temperature. Concentrated orange juice stored at 10℃ can inhibit the growth of yeast in it at 10 ppm; When stored at room temperature, it needs 20 ppm natamycin to achieve bacteriostatic effect. Apple Juice 30 ppm natamycin can prevent apple juice from fermenting for up to six weeks without changing the original taste of the juice. Natamycin in a concentration of 70 mg/kg in tomato juice has a good anti-mold and freshness effect on tomato juice.
